Step-by-Step Instructions

  1. Heat water to 205°F (96°C) using your temperature-controlled kettle
  2. Grind coffee to medium-fine consistency (similar to kosher salt)
  3. Rinse filter with hot water to remove papery taste
  4. Add coffee to filter and create small well in center
  5. Bloom: Pour 60g water in circular motion, wait 30 seconds
  6. First pour: Add water to 200g total (30 seconds)
  7. Second pour: Pour to 350g total (1:30 total time)
  8. Final pour: Pour to 480g total (2:00 total time)
  9. Total brew time: 4:00-4:30 minutes
